品酒通常具備以下幾個必備評分項目

1. COLOUR (顏色) 

The color of wine is one of the most easily recognizable characteristics of wines. 

Color is also an element in wine tasting since heavy wines generally have a deeper color.

The color of a wine can indicate many things about the wine including the varietal used to produce it and its age.

酒的顏色是人們對其的第一印象。

藉由酒色我們能初步判斷其強度、原料及酒齡。

好酒的酒色漂亮,可欣賞其反光、邊緣色帶及透明度等。

除目視外能使用 Hunter Lab: Spectrophotometers 進行衡量,

或是使用 Color Chart 進行比對


2. CLEARNESS (清澈度) Clarity/Turbidity:

Even wines that are so dense as to be opaque should still be clear, at least in the sense that they're not cloudy. 

酒出廠須經過過濾,確保其清澈性,陳放多年的酒,會成為濃郁、沉重的液體,光線愈難穿過。

藉由酒的透明度,我們能夠初步判斷酒齡。

 

3. INTENSITY (強度/烈度) 

The more concentrated and opaque a wine's color, the higher its intensity.

烈度/香味強度及酒體 body 需符合該酒應具備的品質

 

4. BRIGHTNESS (明度) 

Bright (color): In reference to wine color, brightness is used in the everyday sense. 

Bright (light): The term is often used, though, 

to describe how the wine reflects light or refracts light that passes through it.

明度可以指酒顏色的明亮度 (can be determined by CIE(L*, a*, b*) or hunter(L, a, b)  ),也能指其反射及透光之情況,

可判斷酒的品質與年齡

 

5. QUALITY (品質) 

A wine that gives a perception of being multi-layered in terms of flavors and aromas.

好的酒必須具備層次感及複雜的芳香性 (compexity),以及通過儀器的安全檢驗

 

6. ELEGANCE (優雅度) 

ELEGANT: Used to describe wines of grace, balance and beauty.

好酒須具備優雅性、平衡性及美感

 

7. PERSISTENCE (餘韻) 

Used to describe the flavor and persistence of flavor in a wine after tasting.

好酒須具備餘韻悠長的特質

 

8. HARMONY (和諧度) 

HARMONIOUS: Well balanced, with no component obtrusive or lacking.

好酒從入口到餘韻都是和諧的平衡,像連續光譜餘味悠長,無缺乏或是不協調感

隨意調和酒與精心釀造酒的重大區別便在於,單純用幾種香料調和的酒,香味常顯得突兀、單調且餘韻容易退去

 

9. TYPICALITY (典型性) 

Typicity or typicality is how much a wine tastes like the region where it was grown. 

Typicity (French typicité, Italian tipicità) is a term in wine tasting 

used to describe the degree to which a wine reflects its varietal origins
